Gorgeous rhubarb, often crimson, sometimes pink or even light green, is deliciously tart and nicknamed the “pie plant.” It's a well-earned nickname, too. Once it's done, you let it cool and then flip the plan onto a serving plate, exposing the caramelized filling and crust. And then you try not to eat all of it in one sitting.
