It's almost fall, and what do we want with our cooler weather? Warm, delicious pasta! But if you're looking to curb your carb intake, try this ingenious zoodle zucchini noodles recipe.

Zoodles — our new favorite word — are zucchini noodles, which replace carb-heavy pasta and then are baked to perfection with marinara and Parmesan.


  • 2 tablespoon extra virgin olive oil

  • 2 cloves garlic, minced

  • 2 zucchini, spiralized or julienned

  • Salt, to taste

  • Pepper, to taste

  • 1/2 cup marinara sauce

  • 1/4 cup Parmesan

  • 1/2 c. mozzarella

  • 1 tablespoon basil, chopped (optional)


  • Preheat oven to 350 degrees.

  • In an oven-proof skillet, heat olive oil over low heat. Add garlic and julienned zucchini; cook for about 2 to 3 minutes on medium heat, or until zucchini is tender.

  • Season with salt and pepper.

  • Add marinara and half of the Parmesan; stir well.

  • Top with bread crumbs, mozzarella and remaining Parmesan.

  • Bake uncovered at 350 degrees for 15 minutes, or until top begins to brown and cheese is melted.

  • Finish with chopped basil and extra parmesan if desired.
