  • 20 oz.  snapper, diced
  • 5 limes, juice only
  • 1.5 oranges, juice only
  • 4 lemons, juice only
  • 2 Serrano peppers, sliced
  • 1/8 oz. ginger, minced
  • 1 oz. EVOO
  • 1.5 garlic, minced
  • 1.5 oz. red onions, diced
  • 1.5 oz. Roma tomatoes, diced
  • 1 oz. avocados, diced
  • ¼ oz. cilantro, finely chopped
  • Kosher salt, to taste
  • Ground black pepper, to taste



  1. All citrus should be juiced to half a cup each. 
  2. Place snapper, citrus juices, Serrano peppers, ginger, garlic, EVOO, salt and pepper into a bowl or container and mix.
  3. Let stand for 45 minutes before serving. 
  4. Mix 4 oz. ceviche with red onions, Roma tomatoes, avocados and cilantro.
  5. Place into a small glass bowl and serve.
