As winter starts to melt away and we start trickling out of hibernation, the cravings for refreshing frozen treats start to cross our minds! Better yet, how about a boozy frozen treat? If you're planning on entertaining guests soon, here's a delightful idea: turn your champagne toast into sorbet! Whatever you're celebrating, this champagne sorbet is the perfect springy substitution. Cheers!

What you need

  • 4 cups water
  • 1 cup sugar
  • 1 bottle of champagne
  • 1/3 cup lemon juice
  • 1 tablespoon lemon zest
  • cookie scoop or melon baller
  • fresh mint for garnish


  • In a saucepan, bring water, sugar, and zest to a boil until the sugar dissolves.
  • Add the bottle of champagne and heat.
  • Remove from heat and add lemon juice.
  • Refrigerate until chilled completely.
  • Pour mixture in an ice cream maker and process according to its directions.
  • Freeze mixture until firm.
  • Using a cookie scoop or melon baller, scoop two balls of champagne sorbet into mini bowls.
  • Garnish with a mint sprig.
