Aramark, the largest U.S.-based food services provider, teamed up with the American Heart Association to ensure we all have a healthy summer. As part of its Healthy for Life 20 By 20 initiative, Aramark has shared some healthy summer recipes, the first of which is this delicious lightened-up Chicken Caesar Salad. Make it this weekend as part of your Fourth of July smorgasbord!


Serves 4




For the chicken

  • 2 teaspoon vegetable oil
  • 1 pound boneless, skinless chicken breast


For the dressing

  • ½ cup fat free mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon wine vinegar
  • 1-¾ teaspoon Dijon mustard
  • 1 tablespoon grated Asiago cheese
  • 1-½ teaspoon minced garlic
  • ½ teaspoon ground black pepper


For the salad

  • 1-¼ pound romaine lettuce, cut into bite-size pieces (about 3 quarts)
  • 2 cups plain croutons
  • ½ teaspoon ground black pepper




For the chicken

  1. Heat oil in sauté pan over medium-high heat.
  2. Add chicken breasts.
  3. Sauté until no pink remains in center and internal temperature reaches 165° Fahrenheit.
  4. Cool.
  5. Cover.
  6. Chill.
  7. Slice thinly.


For the dressing

  1. Combine dressing ingredients.
  2. Whisk until well blended.
  3. Cover.
  4. Chill.


For the salad

  1. Combine romaine, croutons and dressing.
  2. Mix thoroughly so it's coated.
  3. Place salad on serving platter.
  4. Top with sliced chicken and sprinkle with pepper.
  5. Serve immediately.
