It sucks when you get home from a long day at work feeling so ravenous that it takes away your desire to cook yourself a meal. The last thing you want to do is eat everything in your waking path, so here’s an easy recipe for fried rice that will satiate your appetite.



  • 8 ounces uncooked rice
  • 2 tablespoons vegetable oil
  • Salt to taste
  • 1/4 red pepper, finely chopped
  • 3 scallions, finely chopped
  • 1-2 tablespoons parsley, finely chopped
  • 3 eggs
  • 3 tablespoons soy sauce



  1. In a pot of water, add the 8 ounces of rice, 12 ounces of water, 1 tablespoon of oil and salt and set on high heat, watching and stirring so it doesn’t stick. When the rice comes to a boil and the water evaporates, set flame to low and cover for 15 minutes, stirring occasionally. Check to see if rice is ready. If not, leave another 5-10 minutes, stirring until it’s as cooked as you want it to be.
  2. In a pan, heat up one tablespoon of oil. Scramble the eggs and break them up into small pieces as they cook. Add the red pepper, parsley and scallions to the eggs, stirring about 3-5 minutes.
  3. Add the egg mixture to the rice, along with the soy sauce, stirring until everything is thoroughly mixed and serve.
