Every once in a while, you may want to enjoy a treat or satiate your sweet tooth. There are ways of doing so without undoing all your hard work. Before you derail your efforts with a box of sugary doughnuts, check out this recipe developed by registered dietician and wellness expert Katie Cavuto and California Almonds. These homemade salted caramel almond butter cups are prepared with just two ingredients and fairly simple to whip up.

  • 1/2 cup dark chocolate chips
  • 1/3 cup salted caramel almond butter (or regular almond butter)



  1. Melt your chocolate over a double boiler or in the microwave in 30-second increments.
  2. Place 12 mini-muffin liners into a mini-cupcake pan.
  3. Once the chocolate is melted, spoon 1 teaspoon of chocolate into the bottom of each muffin liner then refrigerate for 5 minutes to set.
  4. Top the chocolate with 1-2 teaspoons of almond butter and an additional 1-2 teaspoons of melted chocolate to cover the almond butter. Garnish with a sliced almond.
  5. Place in the fridge or freeze to set. Store in the fridge or freezer.
