Thanksgiving is right around the corner. If you're mind is already on side dishes — next to desserts, possibly the best part of the feast — then get ready for a quick and easy recipe that may be right up your alley.

Earthbound Farm featured partner Amelia Winslow's recipe for sautéed cabbage with cranberries and pistachios. Winslow explains that as much as she loves shaved Brussels sprouts with pistachios and dried cranberries, it simply takes too long to prepare — an excellent point when considering how many dishes you need to get ready on the big day, never mind on a night when, after a long day at work, you want to reward yourself with a healthy meal that won't take hours to make.

We are all about fast and convenient, as long as it's also healthy. Simply get Earthbound Farm’s new Americana Blend Crunchy Slaw and sauté away. It takes five minutes to prepare, five minutes to cook and serves 2. If you need to feed more on Thanksgiving, simply double, triple or quadruple the recipe as needed.



  • 3 tablespoons extra-virgin olive oil
  • 1 package Earthbound Farm Organic Americana Crunchy Slaw Blend
  • 1/4 cup shelled pistachios
  • 1/4 cup Earthbound Farm Organic Dried Cranberries
  • Juice of 1/2 a lemon
  • Salt to taste



  1. Heat the oil in a large sauté pan. Add half the cabbage blend to the pan and sauté until it begins to soften and wilt; as soon as there’s room, stir in more cabbage until it’s all in the pan. Sauté until the cabbage is tender and beginning to brown on the edges, about 3 to 5 minutes.
  2. Turn off the heat, add the lemon juice and stir in the cranberries and pistachios. Taste for seasoning and add a pinch of salt, if you like. Serve hot.
