We’re a few weeks into football season and nothing beats enjoying some nibbles while watching the game. The temptation to nosh on chips, dips and greasy wings is certainly strong. But you can be stronger by preparing healthy, yet delicious, food that won’t leave you feeling guilty afterward. Besides, are you really going to turn down tacos ever? We think not. These touchdown tacos are made with lean ground beef that cuts the fat without sacrificing taste. Be the hit of the tailgate party or your own living room.



  • 4 dried guajillo chilies (stemmed, seeded and torn into large pieces)
  • 2 chipotle chilies (canned in adobo sauce, stemmed and seeded)
  • 1 tablespoon brown sugar
  • 6 clove garlic (peeled and quartered)
  • 2 tablespoon cider vinegar
  • ¼ teaspoon cinnamon
  • ½ teaspoon vegetable oil
  • 1 cup water
  • 2 pound Laura's Lean stew beef
  • Salt and pepper to taste
  • 12 corn tortillas (warmed until soft and pliable)
  • ½ onion (medium, diced)
  • ½ cup chopped fresh cilantro



  1. Place the dried guajillos, chipotles, brown sugar, garlic, vinegar, cinnamon, oregano, vegetable oil and water in a blender and puree until almost smooth, about 5 minutes.
  2. Place the stew meat in a slow cooker and pour the sauce guajillo sauce over the meat. Season generously with salt and stir to coat. Cover and cook in a slow cooker for 2-3 hours on low heat. Remove the meat from the slow cooker and shred, then return to the sauce.
  3. Serve the sauced meat in tortillas topped with onion and cilantro. Enjoy!
