Prepared in 5 minutes. Cook time 15 minutes. Yields 2.5 cups.



  • 1 tablespoon vegetable oil
  • 2 cups fresh or frozen cranberries (about 8 ounces)
  • 1 tablespoon minced fresh ginger
  • 2 cups Pinot Noir or other dry red wine
  • 1 cup sugar
  • 3 tablespoons chopped crystallized ginger
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon crushed red pepper flakes



  1. In a large saucepan over medium-high heat, heat oil. Add cranberries and fresh ginger. Stir until combined and berries just begin to burst, approximately 3-5 minutes.
  2. Add Pinot Noir, sugar, curry powder and red pepper flakes. Simmer for 15 minutes or so until mixture is reduced to 2.5 cups. Pour into a bowl and serve at room temperature.
  3. Can be made one day ahead and stored in an airtight container in the refrigerator.
